The five-step hack for extra crispy croquette-style potatoes

This method will give you perfect tatties every time. 

There is a multitude of different ways to cook your potatoes, and many people will have their own little tricks to get them extra-crispy. 

One chef has shared her five-step method to getting the best croquette-style potatoes every single time. 

Montana, known as @monmackfood on TikTok, revealed the odd technique she uses to get her crispy layered result. 

In her video, which now has around 4.3 million views, she begins by peeling and grating her potatoes- yes, grating. 

She then fries the strands of potato in olive oil and salt for around five minutes before taking them off the heat and placing it in a glass container lined with cling film.

Montana moves the container to the freezer for a few hours so the potato strands can set into a block.

After removing it from the freezer, she cuts the now frozen potato block into small squares, which she tosses in cornflour. 

The squares are then added to a pan of hot oil (vegetable oil works best) and deep-fried for five to seven minutes. After removing them from the heat, she drains the squares on kitchen paper and seasons with salt.

The result is a bowl of extra-crispy croquette-style potatoes. 

Montana explained likes to grate the potatoes because it helps them stick together when frying. Talking to the Daily Star, she said: “You want a starchy potato, so all the strands of potato stick together and don’t fall apart when you fry them. It’s best to get a cheese grater for the job.

“You technically could dice them really finely with a knife, but it would take ages.”

Her method may take around 2-3 hours to prepare because of the freezing step, but it is totally worth it for perfectly crispy potatoes every time.
