Don’t just use Christmas spices at Christmas say experts who’ve been looking at studies into these amazing spices.
Cinnamon, clove, star anise are the kinds of spices we associate with Yuletide but they are business as usual for the whole year in Middle Eastern and Asian cooking. They fall under the umbrella term of “nutraceuticals”. That is to say, foods or food flavourings that are so powerful in antioxidants and other beneficial plant nutrients that they mimic or even better pharmaceutical drugs synthesised from them.
For example, in the latest research there is nothing on earth which has a higher level of antioxidant than cloves. Antioxidants get their name from their function of donating a spare electron to molecules produced as the billions of mitochondria in our bodies generate energy. These molecules are known as free radicals, or reactive oxygen species, and are one of the key drivers of ageing, and numerous other diseases—a pathology known as oxidative stress.
They are also antibacterial, antiviral, and antifungal.
So don’t be afraid to experiment with Moroccan, Persian and Asian recipes to do your body a massive antioxidant and flavour favour!

A Dubai-based company is producing biodiesel from used cooking oil bringing sustainable transportation options to a major oil-producing country.
The result is a fuel that is less expensive, renewable, and clean.
Say salaam alekum to Lootah Biofuels, a UAE company which now boasts having their own fuel outlets across the city of Dubai, delivering 60 million litres annually.
It is the brainchild of Yousif Bin Saeed Al Lootah, who wants the UAE to be the first nation in the region to mandate that biofuels blends be featured alongside normal fuel in all public stations.
They pay for the used cooking oil collected, thus giving an incentive to providers like restaurants, bakeries, and food chains, which provide 500,000 litres of waste oil every month.
The company says it converted the waste oil into 770 tons of biofuel last year and calculates their product has caused the reduction of 500 million tons of CO2, so far.
