Eddy Temple-Morris makes cheese IN toast

Following the brilliant pop-up station, Virgin Radio Celebrates Diwali, and in honour of the festival of lights, presenter Eddy Temple-Morris has shared a new recipe.

Symbolising the triumph of light over darkness, Diwali is celebrated for five days and sees families get together, light their homes with candles and decorate them with Rangoli patterns.

Virgin Radio Celebrates Diwali launched on Friday 12th November, and ran across all five days.

Regarding his Diwali-inspired recipe, Virgin Radio’s Eddy explains: “This week, I’ve done cheese IN toast, and I guarantee you’ll not find more flavour in a hand held snack!”

Ingredients (serves 2)

2 wholemeal wraps or large chapatis

30 grates of sharp as possible extra mature cheddar 

A handful of coriander leaves and stalks

Two spring onions (or a bit of red onion)

Half teaspoon cumin

Half teaspoon coriander

Half teaspoon ground ginger 

Half teaspoon dried mango powder 

Half teaspoon chilli flakes (no seeds - I used Aleppo pepper. You could use Korean Gochugaru or kashmiri chilli or 1 fresh deseeded chilli)

3 eggs 

A few cherry tomatoes, halved 

Thai sweet chilli sauce and/or ketchup - or a chutney of your choice - or all these things!)

Salt and pepper 

Method 

Add all the dry ingredients in a bowl and mix well 

Turn on the grill

Make a three egg omelette in a large frying pan, when nearly ready add the cheesy mix and spread evenly. Put it under the grill till the cheese bubbles. 

Remove and add a wrap, then a plate, then flip it and add to the pan for the wrap to get crispy for a minute or two. 

Add the sauces you like. Thai sweet chilli works great because it has sweetness and a garlic back note. 

Top with the other wrap, then the plate, flip again and add that to the pan for the wrap to crisp up. 

Cut in four and serve straight away. You will do a backflip at how tasty this is, plus it’s crispy on the outside and oozy in the middle. Absolute heaven.
